How do I curate a catalog myself instead of automating the creation of all available products?

Select no shop colors when creating your store. After saving your store name with no product colors selected, you'll be brought to our Shop Builder Wizard. Instead of following the prompts, click Products in the left navigation menu & select products to include in your shop. 

By default, you will be viewing all the products currently excluded from your shop. You can utilize the filters in the Product Management menu to narrow your selections and include products manually.
